Originally made by monks, the name translates into “Monk’s Head,” and if you look at the wheel from a distance with one eye closed, its slightly round shape does resemble a head. Traditionally sliced horizontally into paper thin shavings with a girolle, it has a boastful, beefy and slightly salty flavor.
