Brie de Meaux
(Cow's milk, France)
Although pasteurized, the rich mushroomy and beefy flavor is often as close as we can get in the U.S. to France's young, raw milk brie. When brought to room temperature, this brie will ooze across you plate, which is exactly what you want it to do if you like full-flavored cheese.
