Brown Swiss cows graze on grass and clover before their unpasteurized flavorful milk is turned into cheese. The only cheese Shelburne Farms makes is Cheddar and they offer it at various ages, ranging from mild to sharp and intense.

Shelburne Farms is a 1,000 acre working farm and non-profit environmental education center.
