St. Pat
(Cow's milk, Cowgirl Creamery, California)
St. Pat arrives in the spring, wrapped in nettle leaves. This creamy cheese is mellow and laid back, giving off only hints of nettle’s smoky, artichoke-like flavor.
Cowgirl Creamery is owned by Sue Conley and Peggy Smith, who both had successful careers as Bay Area chefs before delving into full-time cheesemaking in the nineties. All of their cheeses are made in a renovated barn in Point Reyes Station using organic milk produced by Straus Family Dairy.
