Pierce Point
(Cow's milk, Cowgirl Creamery, California)
The texture of Pierce Pt. can be firmer than other Cowgirl cheeses, but still creamy. It is washed in a Muscato wine and rolled in dried herbs from the Tomales Bay coastal region. In signature Cowgirl style this imparts a subtly intriguing, but never overpowering, layer of flavor.
Cowgirl Creamery is owned by Sue Conley and Peggy Smith, who both had successful careers as Bay Area chefs before delving into full-time cheesemaking in the nineties. All of their cheeses are made in a renovated barn in Point Reyes Station using organic milk produced by Straus Family Dairy.
