Mt. Tam
(Cow's milk, Cowgirl Creamery, California)

An elegant triple-crème that goes beyond buttery and will thrill your taste buds with an earthy flavor the cheesemakers describe as "reminiscent of white mushrooms." Often soft enough to spread, Mt. Tam is rich and luscious without going over the top.

Cowgirl Creamery is owned by Sue Conley and Peggy Smith, who both had successful careers as Bay Area Chefs before delving into full-time cheesemaking in the nineties. All of their cheeses are made in a renovated barn in Point Reyes Station using organic milk produced by Straus Family Dairy.


Pairings:
The delicate flavor of this cheese asks for nothing more than a baguette, although a dollop of a June Taylor fruit conserve will certainly add to the experience.
